Finely chop the onion, garlic, ginger and chilli and soften them in a pot with a little oil. Add the peeled, diced sweet potatoes and toast briefly.

Pour in the chopped tomatoes and the vegetable stock, cover and simmer until the sweet potatoes are completely tender.

Stir in the peanut butter and blend the soup until creamy. Season with the juice of the lime, salt and pepper.

Scatter with chopped roasted peanuts, thin rings of chilli and fresh cilantro, and serve piping hot.
