Brussels sprouts from the airfryer
An everyday German recipe from all over Germany: Brussels sprouts from the airfryer taste quite different from boiled ones, because the dry hot air caramelises the cut surfaces. A teaspoon of honey helps this along, takes the bitterness out of the sprouts and gives the halves a shine. Lemon juice and shaved hard cheese add freshness and savour at the end.

Trim the Brussels sprouts, remove the outer leaves and shorten the stalk end only slightly. Cut too deep and the sprouts fall apart.

Halve the sprouts lengthways. The cut surfaces turn caramel brown in the hot basket, and that is exactly where the sprouts lose their bitterness.

Toss the halves with the rapeseed oil, the honey, the salt and pepper until all the cut surfaces are thinly coated.

Preheat the airfryer to 180 °C. It must not be any hotter, or the honey will burn before the sprouts are done.

Lay the halves cut side down in the basket in a single layer with space between them and stack nothing; work in two batches for a larger quantity. Cook at 180 °C.

Pull out the basket, shake the sprouts and carry on cooking at 180 °C until the sprouts have brown edges and are tender inside but not mushy.

Drizzle the juice of the lemon over the sprouts, scatter the shaved hard cheese on top and serve at once.
