Sheet-Pan Vegetables with Baked Feta and Honey Thyme

Zutaten

  • 400 g baby potatoes
  • 2 piece zucchini
  • 2 piece red bell peppers
  • 1 piece aubergine
  • 300 g cherry tomatoes
  • 1 piece red onion
  • 60 ml olive oil
  • 200 g feta cheese, in one block
  • 20 ml honey
  • 4 piece thyme sprigs
  • 1 pinch salt
  • 1 pinch black pepper

Zubereitung

  1. Heat the oven to 200 °C fan. Halve the potatoes, slice the zucchini into thick half-moons, cut the peppers into strips and the aubergine into cubes, and split the onion into wedges.
  2. Toss the potatoes with half the olive oil, salt, and pepper on a large baking sheet and roast them first so they get a head start.
  3. Toss the remaining vegetables with the rest of the oil and spread them around the pan. Nestle the whole block of feta into the center and scatter the thyme sprigs over everything.
  4. Roast until the vegetables are browned at the edges and the feta is soft. Drizzle the honey over the feta and vegetables and serve straight from the pan.
