Knead the flour, water, oil and a pinch of salt into a smooth dough. Let it rest briefly, then roll it out wafer-thin on a floured baking sheet.

Preheat the oven to 250 C. Mix the creme fraiche with salt and a pinch of nutmeg and spread it thinly over the dough.

Slice the onions into fine rings, dice the bacon and scatter both evenly over the tarte.
