Zutaten

  • 300 g flour
  • 150 g butter
  • 250 g sugar
  • 4 piece eggs
  • 1000 g low-fat quark
  • 1 sachet vanilla custard powder
  • 200 ml heavy cream
  • 1 piece organic lemon

Zubereitung

  1. Knead the flour, 100 g of the sugar, the cold cubed butter and a pinch of salt into a shortcrust. Chill, then press it into a springform pan and pull up a rim.
  2. Beat the eggs with the remaining sugar until fluffy. Add the quark, custard powder, cream and the zest and juice of the lemon, and stir until smooth.
  3. Pour the quark mixture onto the base and smooth the top. Bake in the preheated oven at 160 °C for about 60 minutes.
  4. Turn off the oven and let the cake cool down slowly with the door slightly ajar so it keeps its height.
