Zutaten

  • 8 piece wheat tortillas
  • 200 g grated cheddar
  • 1 can black beans
  • 150 g sweet corn
  • 3 piece spring onions
  • 1 piece red onion
  • 2 piece pickled jalapeños
  • 5 g sweet paprika
  • 20 ml vegetable oil
  • 1 pinch salt

Zubereitung

  1. Drain the beans and mash them lightly. Slice the spring onions into rings, finely dice the red onion and slice the jalapeños.
  2. Combine the beans, corn, onions, jalapeños and paprika in a bowl and season with salt.
  3. Top one tortilla with cheese and the vegetable mixture, cover with a second tortilla and fry in a pan with a little oil for two to three minutes per side until golden and crisp.
  4. Let the finished quesadillas rest briefly, then cut into triangles and serve warm.
