Friesentorte (Frisian plum and cream gâteau)
A German classic from Schleswig-Holstein: in North Frisia the Friesentorte is the cake for birthdays and family celebrations. Dark plum butter and thick layers of whipped cream sit between three crisp puff pastry discs, and nothing goes on top but a little icing sugar. The recipe makes 12 slices.

Preheat the oven to 200 °C top and bottom heat and line a baking tray with baking paper.

Unroll the puff pastry and cut out three circles of 24 cm diameter, using a plate as a guide. Prick the discs several times with a fork.

Bake the discs one after the other on the middle shelf until golden brown and crisp.

Let the discs cool completely on a wire rack.

Whip the cream with the cream stabiliser, the sugar and the vanilla sugar until stiff.

Place the first disc on a cake plate, spread it with half of the plum butter and spread a third of the cream on top.

Lay on the second disc, spread it with the rest of the plum butter and again spread a third of the cream over it.

Dust the third disc with the icing sugar, lay it on carefully and pipe the remaining cream in rosettes around the edge.

Chill the cake so that the layers settle.
