Cut the Harzer cheese into slices about 1 cm thick and halve or quarter these depending on their size.

Peel the red onions and cut them into fine rings. Cut the pickled gherkins into thin slices.

Wash and quarter the apple, remove the core and cut the unpeeled flesh into fine slices.

For the marinade, whisk the white wine vinegar thoroughly with the rapeseed oil, the caraway seeds, the sugar, salt and pepper.
