  • 600 g broccoli
  • 1 piece onion
  • 2 cloves garlic
  • 40 g butter
  • 30 g plain flour
  • 800 ml vegetable stock
  • 150 ml cream
  • 150 g grated cheddar
  • 1 pinch nutmeg
  • 50 g croutons
  • 1 pinch pepper

Zubereitung

  1. Finely dice the onion and garlic, cut the broccoli into small florets and peel and dice the stalk.
  2. Melt the butter in a pot, soften the onion and garlic, stir in the flour and cook briefly. Deglaze with the vegetable stock and whisk until smooth.
  3. Add the broccoli and simmer for about fifteen minutes until tender, then blend the soup until smooth.
  4. Stir in the cream and grated cheddar until the cheese has melted, season with nutmeg and pepper and serve with croutons.
