Crispy Maultaschen (Swabian filled pasta) from the airfryer

Zutaten

  • 8 piece Maultaschen (shop-bought, already cooked, about 100 g each)
  • 2 tbsp rapeseed oil
  • 2 piece onions
  • 1 tbsp butter or margarine
  • 1 tsp salt
  • pepper to taste
  • 1 tbsp chives

Zubereitung

  1. Take the Maultaschen out of the pack and pat them dry all over with kitchen paper. Damp pasta parcels turn leathery in the basket instead of crisp.
  2. Brush the Maultaschen thinly with the rapeseed oil on both sides.
  3. Peel the onions, cut them into fine rings and mix them with the butter or margarine, the salt and the pepper in a small heatproof dish. Loose onion rings would fly around in the airflow, which is why they go into a dish.
  4. Preheat the airfryer to 180 °C.
  5. Lay the Maultaschen in the basket in a single layer with space around them and stack nothing; cook larger quantities in two runs. Cook at 180 °C.
  6. Turn the Maultaschen, stand the dish of onions beside them and finish cooking at 180 °C until the pasta is golden brown and the already cooked filling is 70 °C hot all the way through.
  7. Serve the Maultaschen with the soft onion rings and scatter the cut chives over the top.

Crispy Maultaschen (Swabian filled pasta) from the airfryer

A German classic from Baden-Württemberg, here not in stock but crisp from the basket: ready-made Maultaschen turn golden brown outside and stay juicy inside, with soft onion rings from a small dish alongside. The pasta parcels take on colour all round without any turning and re-greasing in a pan; in return they stay drier than in a pan and do not get its buttery richness. As Maultaschen from the pack are already cooked, this is only about colour and about getting them hot right through.
