  • 4 piece flatbreads (about 150 g each; see recipe Nanê tenûrê — flatbread from the clay oven, baked on a stone in the home oven; or shop-bought Arabic flatbread)
  • water for sprinkling, as needed
  • 80 g clarified butter
  • 4 tbsp sugar

Zubereitung

  1. If the flatbread is not fresh from the oven, preheat the oven to 200 °C top and bottom heat. Sprinkle the breads with a little water, place them directly on the rack on the middle shelf and heat until they are hot and soft again.
  2. Meanwhile, heat the clarified butter in a small pan over a medium heat until it is clear and hot but not yet smoking.
  3. Tear the hot breads into bite-sized pieces and pile them loosely in a warmed shallow bowl or on a platter.
  4. Drizzle the hot clarified butter evenly over the bread; take care, as hot fat burns the skin, so pour slowly and keep children away while you do so.
  5. Sprinkle the sugar over the top, toss the bread lightly once and serve hot straight away, while the sugar is still crackling.
  6. Tip: Instead of sugar, the bread is also delicious with Dims — homemade grape molasses, drizzled over just before serving. Serve with Çay — Kurdish tea in a glass. If you prefer it less sweet, sprinkle on only half the sugar and add a piece of sheep's cheese on the side.
