Chocolate pudding
A German classic served all over Germany: chocolate pudding made from scratch in a pan with cornflour, cocoa and real dark chocolate. It turns deep dark and velvety, tastes far richer than any packet mix, and a spoonful of whipped cream rounds it off. The recipe makes about 700 ml, which is four portions.

Take 100 ml of the milk. Stir the cornflour, the cocoa powder, the sugar and the salt into it until smooth and free of lumps.

Bring the remaining 400 ml of milk to the boil in a pan.

Pour in the mixed cocoa milk, stirring hard, and let the pudding boil vigorously for about a minute, stirring constantly, until it thickens.

Take the pan off the heat. Chop the dark chocolate coarsely, add it to the hot pudding with the butter or margarine and stir until everything has melted.

Fill the pudding into four small bowls and smooth the tops.

Lay cling film directly on the surface so that no skin forms and put the pudding in the fridge to set.

Whip the cream until stiff and decorate the cold pudding with it just before serving.
