  • 200 g red lentils
  • 800 g chopped tomatoes (canned)
  • 1 piece onion
  • 2 cloves garlic
  • 30 ml olive oil
  • 750 ml vegetable stock
  • 200 ml coconut milk
  • 1 pinch ground cumin
  • 1 pinch salt and pepper

Zubereitung

  1. Finely dice the onion and garlic. Heat the olive oil in a pot and sweat both over medium heat for 3 minutes until translucent.
  2. Toast the cumin briefly, then stir in the red lentils.
  3. Add the chopped tomatoes and vegetable stock, bring to a boil and simmer covered for 20 minutes until the lentils are soft.
  4. Blend the soup smooth with an immersion blender, stir in the coconut milk and season with salt and pepper.
