Preheat the oven to 200 °C. Cook the penne in plenty of salted water for 2 minutes less than the packet suggests, then drain.

Finely dice the onion. Melt the butter in a saucepan, sweat the onion until translucent, stir in the flour and cook briefly. Gradually whisk in the milk and let the sauce simmer for about 5 minutes until silky. Season with salt, pepper and nutmeg.

Stir two thirds of the cheese into the hot sauce. Combine the penne, diced ham and peas with the sauce in a baking dish.

Scatter the remaining cheese over the top and bake for about 20 minutes until golden and bubbling.
