Separate the eggs. Whisk the flour with the milk, egg yolks, vanilla sugar and a pinch of salt into a smooth batter. Beat the egg whites until stiff and gently fold them in.

Melt the butter in a large pan. Pour in the batter, scatter the raisins over the top and cook over medium heat until the underside is golden and set.

Tear the pancake into bite-sized pieces with two forks. Sprinkle with the sugar and let the pieces caramelize to golden, turning them several times.

Dust the Kaiserschmarrn with icing sugar and serve straight away with the apple sauce.
