  • 800 g watermelon (rind removed)
  • 150 g feta cheese
  • 1 piece cucumber
  • 1 piece small red onion
  • 30 ml olive oil
  • 20 ml lime juice
  • 1 bunch mint
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Cut the watermelon into bite-sized cubes, flicking out any visible seeds. Halve the cucumber lengthwise and slice into thin half-moons; shave the onion into paper-thin rings.
  2. Toss the onion rings with the lime juice and a pinch of salt and let them sit briefly — this mellows their bite.
  3. Arrange the watermelon and cucumber in a large bowl or on a platter. Spoon the onions and their lime juice over the top and drizzle with the olive oil.
  4. Crumble the feta coarsely over the salad, scatter with torn mint leaves, and finish with black pepper. Serve well chilled, right away, before the melon weeps.
