Strawberry Spinach Salad with Toasted Seeds

Ingredients

  • 200 g baby spinach
  • 400 g strawberries
  • 50 g sunflower seeds
  • 30 g pumpkin seeds
  • 1 piece red onion
  • 45 ml balsamic vinegar
  • 45 ml olive oil
  • 15 ml maple syrup
  • 10 g Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Toast the sunflower and pumpkin seeds in a dry pan over medium heat until golden, then let them cool on a plate.
  2. Hull the strawberries and halve or quarter them depending on size. Slice the onion into thin rings, wash the spinach and spin it thoroughly dry.
  3. Whisk the balsamic vinegar, olive oil, maple syrup, mustard, salt and pepper into a creamy dressing.
  4. Gently toss the spinach, strawberries and onion rings with the dressing, scatter the toasted seeds on top and serve immediately.
