Toast the walnuts in a dry pan for 3 minutes, let them cool and chop them coarsely.

Trim the fennel, set the delicate fronds aside and shave the bulbs into paper-thin slices with a mandoline. Core the apples and cut into fine wedges.

For the dressing, whisk the juice and a little zest of the lemon with olive oil, honey, mustard and salt. Toss the fennel and apple in it straight away so the apple stays pale.

Scatter the salad with the toasted walnuts, chopped parsley and the reserved fennel fronds and serve.
