Amerikaner (soft iced sponge rounds) from the airfryer

⏱ 39 min · 🍽️ 8 Portionen · 🧂 11 Zutaten

Zutaten

  • 150 g plain flour (type 405)
  • 60 g sugar
  • 1 pack vanilla sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 pinch nutmeg (grated)
  • 1 piece egg (medium)
  • 50 g soft butter or margarine
  • 50 ml milk
  • 60 g icing sugar
  • 1 tbsp lemon juice

Zubereitung

  1. Mix the plain flour with the sugar, the vanilla sugar, the baking powder, the salt and the nutmeg in a bowl.
  2. Add the egg, the soft butter or margarine and the milk and stir everything to a thick batter that tears only reluctantly. It should drop from the spoon but not flow.
  3. Cut two pieces of baking paper to the size of the basket and place four mounds of batter on each, well spaced. Spread the mounds with the back of a spoon into flat rounds of about 8 cm, as the batter barely spreads any further in the basket.
  4. Preheat the airfryer to 160 °C.
  5. Put the first sheet of paper with four Amerikaner into the basket in a single layer and stack nothing on top; the other four go in for a second batch. The paper is weighed down by the batter, otherwise it flies into the fan. Bake at 160 °C.
  6. Carry on baking at 160 °C until the underside is golden brown and a wooden skewer stays dry. Do not turn them, as the soft batter would spread and lose its smooth underside.
  7. Leave the Amerikaner to cool completely on a wire rack.
  8. Stir the icing sugar smooth with the lemon juice and spread it over the flat underside of the cold cakes.

Amerikaner (soft iced sponge rounds) from the airfryer

A German classic that is a fixture at children's birthday parties all over Germany: flat little sponge cakes that are traditionally coated with white icing on their smooth underside. The batter stays soft and tastes delicately of vanilla and a hint of nutmeg, while the icing turns matt as it dries and cracks quietly as you bite into it. In the airfryer they bake at a gentle 160 °C, though in two batches, because only four fit side by side.
