  • 150 g lamb's lettuce
  • 2 piece ripe pears
  • 60 g walnuts
  • 80 g soft goat cheese
  • 45 ml olive oil
  • 20 ml white wine vinegar
  • 15 g honey
  • 10 g medium mustard
  • 1 pinch salt

Instructions

  1. Pick over the lamb's lettuce, wash it thoroughly and spin dry. Toast the walnuts in a dry pan over medium heat until golden.
  2. For the dressing, whisk the olive oil, white wine vinegar, honey, mustard and a pinch of salt in a bowl until smooth.
  3. Quarter the pears, remove the cores and cut them into thin slices.
  4. Toss the lamb's lettuce with the dressing, arrange with pear slices, toasted walnuts and dollops of goat cheese and serve right away.
