Preheat the oven to 200 degrees. Trim and halve the Brussels sprouts and finely chop the garlic.

Toss the sprouts with olive oil, garlic, salt and pepper, spread on a baking tray and roast for about twenty minutes until the edges caramelize.

Stir together the honey and mustard, drizzle over the hot sprouts and roast for another five minutes.

Toast the flaked almonds alongside briefly, scatter everything with parmesan and chili flakes and serve warm.
