  • 1 piece fresh horseradish root (approx. 150 g)
  • 1 piece organic lemon (juice)
  • 3 piece tart apples
  • 1 tsp sugar
  • 1 pinch salt

Zubereitung

  1. Wash the horseradish root, cut off the woody top end and peel the root thinly with a vegetable peeler.
  2. Open a window and grate the root on a fine grater, keeping your head to one side and not leaning over the grater, as the rising fumes sting the eyes and nose sharply.
  3. Mix the grated horseradish with the squeezed lemon juice straight away so that it stays pale and does not turn brown.
  4. Peel the apples, quarter them, remove the cores and grate the quarters coarsely onto the horseradish, then combine everything quickly.
  5. Stir in the sugar and the salt and leave the Apfelkren to stand covered in a cool place.
  6. Taste it again before serving; if the relish has turned out too hot, fold in another grated apple.
