Roasted Garlic Bulbs from the Airfryer
A German starter recipe for all of Germany: whole garlic bulbs are slowly roasted with oil and thyme until the cloves are soft and golden. The soft cloves can be spread onto toasted white bread like a paste and taste mild and sweet instead of pungent. The small basket holds the bulbs closer to the heat and saves the long preheating of a big oven, but only four bulbs will fit side by side.

Cut the top off each garlic bulb so that all the cloves are exposed. Pull off the loose outer skins, but keep the bulb itself together.

Brush the cut surfaces with the olive oil, season with the salt and the pepper and lay the thyme sprigs, broken into pieces, on top.

Preheat the airfryer to 160 °C.

Cut a piece of baking paper to the size of the basket base and set the bulbs on it cut side up in a single layer with space between them, without stacking anything; cook larger quantities in two batches. The paper has to be weighed down by the bulbs, otherwise the air stream lifts it. Cook at 160 °C.

Do not turn the bulbs, as the oil would run out of the cloves and the cut surfaces would dry out. Instead continue cooking at 160 °C until the cloves feel soft under pressure and look golden.

Take the bulbs out and keep them warm, then lay the white bread in the basket in a single layer and toast it at 160 °C.

Squeeze the soft cloves out of their skins and spread them over the toasted white bread.
