Grated Carrot and Apple Salad
A German classic that comes to the table all over the country: finely grated carrots and apples dressed with nothing more than lemon, oil and a trace of sugar. The salad glows orange, tastes fresh and sweet and crunches pleasantly between the teeth. Toasted sunflower seeds add bite and a nutty aroma.

Zubereitung
- 1
Toast the sunflower seeds in a dry pan over medium heat, stirring, until golden brown, then leave them to cool on a plate.
- 2
Peel the carrots and grate them finely on a fine grater.
- 3
Wash the apples, quarter them and remove the cores. Grate the unpeeled quarters as well and mix them with the lemon juice straight away so that they do not turn brown.
- 4
Add the grated carrots to the apples, stir in the rapeseed oil and the sugar and season with salt and pepper.
- 5
Cover the salad and leave it to stand briefly so the flavours can mingle.
- 6
Just before serving, fold in the chopped parsley and scatter the toasted sunflower seeds over the top.
