Hot Chocolate
A German winter classic that belongs in the cup all over the country: hot chocolate the old-fashioned way, with real dark chocolate and cocoa melted into milk. Thick, dark and velvety, it has little in common with the powdered drink from a sachet. A cap of whipped cream and a few chocolate shavings turn it into the reward after a walk in the snow.

Finely chop the dark chocolate.

Warm the milk in a pan over medium heat until it steams; it must not boil. Take out about 100 ml of the hot milk and stir the cocoa powder and sugar into it until smooth and free of lumps.

Pour the cocoa mixture back into the remaining hot milk, add the chopped chocolate, the salt and the cinnamon and let everything melt over low heat, stirring constantly.

Whisk the hot chocolate vigorously until a fine layer of foam forms.

Whip the cream with the vanilla sugar until stiff.

Pour the hot chocolate into warmed cups, top each with a cap of whipped cream and scatter the grated chocolate over it.
