Cold Soba Noodles

Zutaten

  • 1 carrot
  • 1 t. chile-garlic paste
  • 2 T. chopped fresh cilantro
  • 1 t. grated fresh ginger
  • 1 clove of garlic, minced (I grated mine on a microplane)
  • 2-3 green onions, thinly sliced
  • 3 hard-cooked eggs, halved
  • lime wedges, for serving
  • 1 T. toasted sesame oil
  • 1 T. sesame seeds, lightly toasted
  • 9 oz. pkg soba noodles
  • 2 T. soy sauce
  • a pinch of sugar
  • 1/4 c. unseasoned rice vinegar

Zubereitung

  1. Cook the soba noodles according to package directions (mine called for boiling for 4 minutes).
  2. Drain noodles and rinse well with cold water, until noodles feel cool to the touch.
  3. Drain well again, set aside in a large bowl while preparing the rest of the dish.In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, chile-garlic paste, garlic and ginger. To the bowl with the noodles add the carrot, green onion, cilantro and sesame seeds.
  4. Add the dressing and toss to coat.
  5. Serve noodles garnished with the hard-cooked eggs and the lime wedges.
