Ingredients

  • 800 g waxy potatoes
  • 150 g streaky bacon
  • 2 piece onions
  • 30 ml vegetable oil
  • 1 pinch salt
  • 1 pinch pepper
  • 0.5 bunch chives

Instructions

  1. Boil the potatoes in their skins in salted water until just tender, drain, let them steam off briefly, then peel and slice. Cooking them a day ahead works best.
  2. Dice the bacon and render it in a large pan without oil until crisp, then lift it out. Slice the onions into rings.
  3. Add the oil to the bacon fat, lay the potato slices in the pan and fry over medium heat until golden brown, turning only occasionally so they crisp up.
  4. Add the onions and fry until soft and lightly browned. Fold the bacon back in, season with salt and pepper, and serve sprinkled with chives.
