Quinoa Avocado Salad with Lime Dressing

Ingredients

  • 250 g quinoa
  • 500 ml water
  • 2 piece ripe avocados
  • 250 g cherry tomatoes
  • 1 piece cucumber
  • 1 piece red onion
  • 3 piece organic limes
  • 30 ml olive oil
  • 40 g pumpkin seeds
  • 1 bunch cilantro
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Rinse the quinoa in a fine sieve under hot water, bring it to a boil with the water and a little salt, then cover and cook over low heat until tender. Let it steam off uncovered and cool.
  2. Halve the cherry tomatoes, dice the cucumber, finely slice the onion and roughly chop the cilantro.
  3. Toast the pumpkin seeds in a dry pan until they start to pop and smell nutty.
  4. Whisk the lime juice and a little zest with the olive oil, salt and pepper to make a dressing.
  5. Dice the avocados at the last minute. Gently toss the quinoa with the vegetables, cilantro and dressing, top with avocado and pumpkin seeds and serve.
