Remove the core from the cabbage and shred it very finely. Put it in a large bowl, add salt and massage firmly with your hands until it softens.

Finely grate the carrots. Core the apples and cut them into fine matchsticks, then add both to the cabbage.

For the dressing, whisk together the yogurt, mayonnaise, apple cider vinegar, mustard and honey, then season with pepper.

Fold the dressing through the slaw so everything is evenly coated. Snip the chives into small rings and stir them in.
