Mediterranean Braised Cod

Ingredients

  • 600 g cod fillet
  • 400 g chopped tomatoes (can)
  • 80 g pitted black olives
  • 30 g capers
  • 1 piece onion
  • 2 cloves garlic
  • 30 ml olive oil
  • 1 pinch dried oregano
  • 1 piece lemon
  • 0.5 bunch flat-leaf parsley

Instructions

  1. Divide the cod into four pieces, season with salt and squeeze over a little lemon juice. Finely dice the onion and slice the garlic.
  2. Heat the olive oil in a wide pan and soften the onion and garlic until translucent. Stir in the oregano.
  3. Add the tomatoes, olives and capers and simmer uncovered until the sauce thickens slightly. Season with salt and pepper.
  4. Nestle the cod pieces into the sauce, spoon a little over the top and let them poach, covered, over low heat until the fish flakes.
  5. Scatter with parsley and serve with lemon wedges.
