Grate the garlic finely and stir it with both paprikas, the olive oil, salt, pepper and the grated zest of the lemon into a paste. Rub it all over the chicken thighs, working some under the skin.

Lay the thighs skin-side up on a baking tray and let them sit for at least 20 minutes to take on the flavour. Meanwhile heat the oven to 220 degrees.

Scatter a few thyme sprigs over the top and roast on the middle shelf for 40 to 45 minutes, until the skin is golden and crisp and the juices run clear.
