Peel the celeriac and slice into rounds about 1 cm thick. Parboil in salted water for 8 minutes until slightly tender, then drain.

Set up three plates with flour, beaten eggs and breadcrumbs. Season the celeriac slices, then coat each in turn in flour, egg and breadcrumbs.

Heat plenty of oil in a pan and fry the breaded slices over medium heat until golden brown and crisp on both sides.
