Brew the espresso, mix it with the amaretto and let it cool. Separate the eggs and beat the whites with a pinch of salt until stiff.

Beat the egg yolks and sugar until creamy, then stir in the mascarpone. Gently fold in the stiff egg whites until you have an airy cream.
