Peel the potatoes, cut them into chunks and boil in salted water until tender. Drain, then mash with butter and milk into a creamy purée and season with salt.

Finely dice the onion and carrots, and mince the garlic. Fry them in olive oil, then add the ground lamb and brown it until crumbly.

Toast the tomato paste, then deglaze with the vegetable stock and worcestershire sauce. Add the thyme and peas, season and let it reduce.

Spoon the meat mixture into a baking dish and spread the mashed potato evenly on top. Draw a pattern with a fork so the peaks turn crisp.
