Ingredients

  • 300 g beef shoulder
  • 400 g green beans
  • 500 g waxy potatoes
  • 2 piece carrots
  • 1 piece onion
  • 1 l beef broth
  • 2 piece bay leaves
  • 1 bunch fresh summer savory
  • 1 bunch parsley
  • 20 ml rapeseed oil
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Cut the beef into cubes of about 3 cm. Heat the oil in a large pot and sear the meat on all sides until deeply browned.
  2. Pour in the beef broth, add the bay leaves and simmer gently, covered, over low heat until the meat turns tender.
  3. Meanwhile dice the onion, slice the carrots and cut the potatoes into bite-sized pieces. Trim the beans and cut them in half.
  4. Add onion, carrots and potatoes to the pot and cook for ten minutes. Then stir in the beans and savory and continue cooking until everything is tender.
  5. Season the stew generously with salt and pepper, remove the savory sprigs and serve scattered with plenty of chopped parsley.
