Ingredients

  • 400 g wheat flour
  • 250 ml lukewarm water
  • 7 g dry yeast
  • 5 g sugar
  • 6 g salt
  • 30 ml olive oil (for the dough)
  • 40 g za'atar
  • 60 ml olive oil (for the topping)

Instructions

  1. Dissolve the yeast and sugar in the lukewarm water and let it sit until foamy. Mix the flour and salt in a bowl.
  2. Add the yeast water and olive oil to the flour and knead into a smooth dough. Cover and let it rise in a warm spot until doubled in size.
  3. Stir the za'atar with the topping olive oil into a spreadable paste. Preheat the oven to 240 °C.
  4. Divide the dough into four portions and roll each into a round flatbread. Place on a tray, leave the rim slightly thicker and spread the za'atar paste evenly over the top.
  5. Bake in the hot oven until the rim is golden and the flatbreads puff up. Serve warm.
