Homemade Crispy Falafel

Ingredients

  • 250 g dried chickpeas
  • 1 piece onion
  • 3 cloves garlic
  • 1 bunch flat-leaf parsley
  • 1 bunch fresh cilantro
  • 10 g ground cumin
  • 5 g ground coriander
  • 3 g baking soda
  • 30 g chickpea flour
  • 8 g salt
  • 45 ml rapeseed oil for frying

Instructions

  1. Soak the dried chickpeas overnight in plenty of cold water until doubled in size. Do not cook them. Drain well afterwards.
  2. Blitz the chickpeas with the onion, garlic, herbs, cumin, coriander, baking soda, chickpea flour and salt to a coarse, mouldable paste. Keep some texture rather than a smooth purée.
  3. Chill the mixture for 20 minutes to firm up, then shape into small, slightly flattened patties with damp hands.
  4. Heat the oil in a pan and fry the falafel over medium heat until golden and crisp all over, then drain on paper towels. Serve with flatbread and tahini.
