Cod in Mustard Cream Sauce

Ingredients

  • 600 g cod fillet
  • 800 g waxy potatoes
  • 1 piece onion
  • 30 g butter
  • 25 g flour
  • 400 ml vegetable stock
  • 150 ml cream
  • 40 g medium mustard
  • 1 bunch dill

Instructions

  1. Peel the potatoes and boil in salted water until tender. Meanwhile salt the cod and poach it gently in lightly simmering seasoned stock until just cooked, then keep warm.
  2. For the sauce, soften the finely diced onion in the butter until translucent, then stir in the flour and cook briefly.
  3. Pour in the poaching stock and the cream, whisk smooth and let it simmer to a silky sauce. Stir in the mustard and season with salt and pepper.
  4. Fold through plenty of chopped dill, spoon the mustard sauce over the cod and serve with the boiled potatoes.
