Crispy Tuna Patties

Ingredients

  • 3 can tuna in water (150 g each, well drained)
  • 2 piece eggs
  • 100 g breadcrumbs
  • 1 piece onion, finely diced
  • 0.5 bunch parsley, chopped
  • 1 piece organic lemon (zest and juice)
  • 30 ml olive oil for frying
  • 200 g plain yogurt for the dip
  • 2 pinch salt and pepper

Instructions

  1. Drain the tuna thoroughly and flake it finely in a bowl with a fork. Add the eggs, breadcrumbs, onion and parsley, then season generously with the zest of half the lemon, salt and pepper.
  2. Mix everything into a mouldable mass and let it rest for 10 minutes so the breadcrumbs soak up the moisture.
  3. With damp hands, shape eight evenly sized patties and press them down slightly.
  4. Heat the olive oil in a pan over medium heat and fry the patties for three to four minutes per side until golden and crisp.
  5. For the dip, stir the yogurt with the juice of half the lemon and a pinch of salt, then serve alongside the warm patties.
