Ingredients

  • 300 g brown lentils
  • 2 piece potatoes
  • 2 piece carrots
  • 1 piece leek
  • 1 piece onion
  • 200 g smoked sausage
  • 1.2 l vegetable broth
  • 30 ml red wine vinegar
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Rinse the lentils. Peel and dice the potatoes and carrots, slice the leek into rings and dice the onion.
  2. Sweat the onion in a large pot with a little oil, then briefly cook the vegetables. Add the lentils and pour in the vegetable broth.
  3. Cover and simmer over low heat until the lentils and potatoes are tender. Add the sliced sausage halfway through the cooking time.
  4. Season the stew generously with vinegar, salt and pepper. It tastes even better reheated the next day.
