Alsatian Tarte Flambee

Ingredients

  • 250 g wheat flour
  • 120 ml water
  • 30 ml olive oil
  • 200 g creme fraiche
  • 150 g smoked bacon
  • 2 piece onions
  • 1 pinch salt
  • 1 pinch nutmeg

Instructions

  1. Knead the flour, water, oil and a pinch of salt into a smooth dough. Let it rest briefly, then roll it out wafer-thin on a floured baking sheet.
  2. Preheat the oven to 250 C. Mix the creme fraiche with salt and a pinch of nutmeg and spread it thinly over the dough.
  3. Slice the onions into fine rings, dice the bacon and scatter both evenly over the tarte.
  4. Bake in the hot oven until the edges are crisp and golden and the bacon is lightly browned. Serve hot.
