Chicken Coconut Curry

Ingredients

  • 600 g chicken breast
  • 400 ml coconut milk
  • 30 g red curry paste
  • 200 g bell pepper
  • 150 g onion
  • 30 ml vegetable oil
  • 1 bunch cilantro
  • 1 pinch salt

Instructions

  1. Cut the chicken into bite-sized strips. Cut the onion into wedges and the bell pepper into strips.
  2. Heat the oil in a deep pan and fry the curry paste for 1 minute until fragrant.
  3. Add the chicken and sear over high heat, then add the onion and pepper and cook for 3 minutes.
  4. Deglaze with coconut milk and simmer for 12 minutes until the sauce thickens slightly. Season with salt and scatter with cilantro.
