Smoky Black Bean Dip

Ingredients

  • 2 (15-ounce) cans organic black beans, rinsed and drained
  • 1 1/2 teaspoons adobo sauce (chipotles in adobo sauce can be found in your Mexican food section)
  • 1 teaspoon salt
  • 1 teaspoon garlic pepper, or other all purpose seasoning
  • 2 tomatoes, diced
  • Juice of 1 lime
  • 1/2 jalapeno (scrape out the seeds if you are sensitive to spice)
  • 1/2 red onion, diced
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Place beans, adobo sauce, salt and garlic pepper in a food processor, and pulse until just broken up.
  2. Add the tomatoes, lime, jalapeno, red onion and cilantro into food processor with the beans and pulse until just combined.
  3. Serve with a fresh grated cheddar, cilantro, a dollop of low fat sour cream and some organic blue corn chips.
