Ingredients

  • 250 g beef shoulder
  • 250 g pork neck
  • 500 g waxy potatoes
  • 300 g savoy cabbage
  • 2 piece carrots
  • 1 piece leek
  • 1 piece onion
  • 750 ml beef broth
  • 1 bunch parsley
  • 30 ml rapeseed oil
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Cut the beef and pork into bite-sized cubes and season with salt and pepper. Dice the onion, slice the potatoes and carrots, cut the cabbage into ribbons and the leek into rings.
  2. Brush a wide pot with the oil. Layer in the meat, onion and vegetables, lightly seasoning each layer with salt and pepper.
  3. Pour in the beef broth until the top layer is just covered and bring the stew to a single boil.
  4. Cover and braise over low heat without stirring, so the layers stay intact, until the meat and potatoes are tender.
  5. Gently fold everything together, adjust the seasoning and serve scattered with plenty of chopped parsley.
