Ingredients

  • 800 g potato gnocchi
  • 80 g butter
  • 20 piece sage leaves
  • 50 g grated parmesan
  • 1 piece lemon
  • 5 g salt
  • 1 pinch black pepper

Instructions

  1. Cook the gnocchi in boiling salted water until they rise to the surface, then drain and let them dry well.
  2. Melt the butter in a large pan over medium heat and keep cooking until it smells nutty and turns lightly brown. Add the sage leaves and fry them crisp.
  3. Add the drained gnocchi to the brown butter and fry, turning now and then, until golden and crisp.
  4. Season with salt, pepper and a little lemon zest and serve scattered with plenty of parmesan.
