Thaw the spinach and squeeze out well, then mix with the ricotta, half the parmesan, nutmeg, salt and pepper to make a filling.

For the sauce, soften the onion and garlic in olive oil, add the chopped tomatoes and simmer for 10 minutes, then season with salt.

Fill the cannelloni tubes with the spinach and ricotta mixture and lay them in a baking dish spread with tomato sauce. Spoon the rest of the sauce over the top.

Scatter with mozzarella and the remaining parmesan and bake at 190 °C for 30 minutes until golden and bubbling.
