Soak wooden skewers in water so they don't scorch on the grill. Cut the zucchini into thick rounds and the peppers into bite-sized squares, split the onion into wedges and separate the layers, and halve the mushrooms.

For the marinade, whisk the olive oil with finely chopped garlic, lemon juice, thyme, paprika, salt, and pepper. Toss the vegetables in it and let them soak up the flavor.

Thread the vegetables onto the skewers, alternating colors — add cubes of halloumi too if you like. Put the cherry tomatoes at the ends so they don't get crushed.
