Ingredients

  • 2 piece zucchini
  • 2 piece red bell peppers
  • 1 piece red onion
  • 250 g cherry tomatoes
  • 250 g chestnut mushrooms
  • 80 ml olive oil
  • 2 cloves garlic
  • 15 ml lemon juice
  • 5 g dried thyme
  • 5 g sweet paprika
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Soak wooden skewers in water so they don't scorch on the grill. Cut the zucchini into thick rounds and the peppers into bite-sized squares, split the onion into wedges and separate the layers, and halve the mushrooms.
  2. For the marinade, whisk the olive oil with finely chopped garlic, lemon juice, thyme, paprika, salt, and pepper. Toss the vegetables in it and let them soak up the flavor.
  3. Thread the vegetables onto the skewers, alternating colors — add cubes of halloumi too if you like. Put the cherry tomatoes at the ends so they don't get crushed.
  4. Grill the skewers over high heat, turning several times, until the vegetables are tender and nicely charred. Brush with the leftover marinade and serve.
