Tofu in Black Bean Sauce

Ingredients

  • 400 g firm tofu
  • 30 g fermented black beans
  • 1 piece red bell pepper
  • 3 piece spring onions
  • 2 cloves garlic
  • 30 ml soy sauce
  • 30 ml neutral vegetable oil
  • 200 ml water

Instructions

  1. Pat the tofu dry and cut it into bite-sized cubes. Roughly chop the black beans, finely dice the garlic, slice the bell pepper into strips and cut the spring onions into rings.
  2. Heat the oil in a non-stick pan and fry the tofu cubes until golden and crisp all over, then lift them out for a moment.
  3. Fry the garlic and black beans in the remaining oil until fragrant. Add the bell pepper and cook for another 2 minutes.
  4. Deglaze with the soy sauce and water, return the tofu to the pan and toss everything for 3 minutes until the sauce turns glossy. Fold in the spring onions right at the end.
