Ingredients

  • 500 g waxy potatoes
  • 600 g cauliflower
  • 1 piece onion
  • 2 piece tomatoes
  • 3 cloves garlic
  • 20 g ginger
  • 45 ml vegetable oil
  • 1 pinch cumin seeds
  • 5 g turmeric
  • 5 g ground coriander
  • 5 g garam masala
  • 0.5 bunch fresh coriander
  • 1 pinch salt

Instructions

  1. Peel the potatoes and cut into bite-sized cubes, and break the cauliflower into small florets. Dice the onion, finely grate the garlic and ginger, and chop the tomatoes.
  2. Heat the oil in a large pan and briefly toast the cumin seeds until fragrant. Add the onion and cook until soft.
  3. Stir in the garlic, ginger, turmeric and ground coriander. Add the potatoes and cauliflower and coat them all over in the spices.
  4. Mix in the tomatoes, season with salt, cover and cook over medium heat for 20 minutes. Turn occasionally until the vegetables are tender and lightly charred.
  5. Season with garam masala and serve scattered with fresh coriander.
