Clean the mushrooms and slice them. Finely dice the onion and garlic. Cut the chives into fine rings.

Heat the olive oil in a wide pan and sear the mushrooms over high heat until golden brown. Add the onion and garlic and cook until translucent.

Cook the tagliatelle until al dente in well-salted water. Meanwhile add the cream and thyme to the mushrooms and reduce for a few minutes until creamy. Stir in the parmesan and season with salt.

Lift the drained pasta into the sauce with a splash of cooking water and toss. Serve sprinkled with chives.
