Tagliatelle in Creamy Mushroom Sauce

Ingredients

  • 400 g tagliatelle
  • 400 g mixed mushrooms
  • 1 piece onion
  • 2 cloves garlic
  • 200 ml cream
  • 1 bunch thyme
  • 40 g grated parmesan
  • 30 ml olive oil
  • 0.5 bunch chives
  • 6 g salt

Instructions

  1. Clean the mushrooms and slice them. Finely dice the onion and garlic. Cut the chives into fine rings.
  2. Heat the olive oil in a wide pan and sear the mushrooms over high heat until golden brown. Add the onion and garlic and cook until translucent.
  3. Cook the tagliatelle until al dente in well-salted water. Meanwhile add the cream and thyme to the mushrooms and reduce for a few minutes until creamy. Stir in the parmesan and season with salt.
  4. Lift the drained pasta into the sauce with a splash of cooking water and toss. Serve sprinkled with chives.
